Total destemming, crushing, prolonged maceration for 5 days with control of fermentation temperatures at about 26ºC.

STAGE
4 months in Oak barrels and later stage of 9 months in bottle

Colour/Appearance: Ruby - Clear
Aroma: Of good intensity with notes of raspberry, blackcurrant and black pepper
Flavour: Fruity, soft, balanced and fresh with good structure, final with very present toast notes
Food Pairing: Great to accompany red and well seasoned meat dishes, including hunting meat and traditional Portuguese cuisine. It should be consumed at 16º to 18ºC
